Dr. Parnell is an Assistant Professor in the Department of Physical Education and Recreation Studies at Mount Royal University. She holds a PhD in Medical Sciences from the University of Calgary. Her dissertation focused on prebiotic fibre as a dietary intervention for obesity. She has several peer-reviewed publications in the fields of nutrition and obesity. Her program of research involves developing dietary interventions for the prevention and treatment of obesity and its associated metabolic disorders. She also has an interest in dietary supplements and their role in physical performance. Jill enjoys being active and healthy and spends her spare time mountain biking, skiing, running, and yoga.

Kristin Wiens is a Registered Dietitian and holds a Master of Science from the University of British Columbia. Kristin has worked as both a clinician and researcher, and is a co-author of several peer-reviewed publications in the fields of patient education and nutrition. Currently living in Champaign, IL, Kristin is a research coordinator for the IHOPE Study at the University of Illinois, a project investigating the impact of nutrition support and physical activity during dialysis treatment. Kristin is a member of the College of Dietitians of Alberta, Dietitians of Canada, Academy of Nutrition and Dietetics, and the Canadian Obesity Network. In her spare time Kristin enjoys cooking, running, practicing tai chi and yoga and, of course, eating!
